As a young man, he began his first experiences as a pizzaiolo in the family restaurant and in parallel he participated in various courses in the pizzeria sector, until he became an Instructor of the Italian School of Pizzaioli, becoming a reference point in the training of young neo pizzaioli in the Apuan area. Since 2004, he has run his own restaurant “Ale’s Pizza” in Marina di Massa, and has been a partner in three pizzerias in Montpellier, France, for several years. He participates in various competitions and contests obtaining excellent results, he also collaborates for years with the organization of the World Pizza Championship as a competition judge.
