Passion and determination have allowed for continued growth from a professional and entrepreneurial standpoint until he now owns a successful restaurant in Viareggio, Pizzeria Manè sul mare. His desire to experiment led him to offer different types of doughs, from classic pizza to pala, as well as specialties from his home region, such as cecina. An instructor at the Italian Pizzaioli School, he attended the PFC Master Instructor course in May 2014. After participating in various competitions and contests obtaining excellent results, he has been collaborating for years with the World Pizza Championship organization as a competition judge.
