Graziano is a true authority on pizza, celebrated as one of the world's best pizza makers and an award-winning world champion. He has been Technical Area Referent of Scuola Italiana Pizzaioli since 1991: holds courses for pizzaioli at several levels, also consults on doughs, equipment use, and product testing for Italian and foreign companies in the restaurant industry. Speaker for Masterclasses at international trade shows in the catering industry. Performs supervision and support to new Instructors for the Italian and foreign branches of Scuola Italiana Pizzaioli. He is in charge of the Judges at the Ovens of the World Pizza Championship.
